Crock Pot Beef Stew Recipe

I have been making a similar beef stew but recently adapted it for the crock pot.

We made this on Saturday and it turned out great.

Ingredients

small amount of oil
2 pounds Beef cut into large chunks.
Onions
Carrots
Potatoes
1/2-1 tsp chili powder
1/4-1/2 tsp cumin
2-3 tsp thyme
salt and pepper to taste
1 can diced tomatoes with liquid (14.5 oz)
1/2 small can of tomato paste

Instructions

Melt a small amount of oil of your choice to a large pan and add Beef Chunks. Sprinkle with Chili Powder and Brown over medium high heat.

Transfer meat and liquid from pan into a large crock pot. Add can of tomatoes and half can of tomato paste. Reserve the other half of the can in a freezer bag for next time. Add seasonings and combine well.

I did not include amounts for the veggies but I added about the same volume as the meat. If you like more veggies than meat you may want to go with less meat and more veggies.

I did not use a lot of potatoes because I am on a low carb diet and do not eat them. I do not measure but I would use at least one large onion cut up into large pieces and then fill the rest of the crock pot with potatoes and carrots leaving just enough room to stir the ingredients. After it cooks a bit the volume will be reduced for easier stirring.

Cook covered with your crock pot on the low setting for 8 hrs. Turn off the heat and unplug the crock pot. Let it sit for about an hour or until it is cooled to a better temperature for eating. The cooling also makes for a less watery stew.
