Homemade Banana Bread is a quick and easy family favorite. You can get a recipe for it in various locations, but I like to think the recipe I use is special. It is easy to make, my family even helps me make it.
First, set aside about an hour. Then you can begin by collecting your ingredients. You will need: 2 cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda and Ã?Â¼ teaspoon salt (optional) all placed together in a medium mixing bowl. Mix these dry ingredients.
Next, in a large mixing bowl, BEAT (with mixer on high, until creamy) 2/3 cup of sugar, and 6 tablespoons softened butter. Then add 2 large eggs, and beat again.
In a separate, shallow pan mash 3 ripe bananas. As you mash add Ã?Â¼ cup buttermilk (or just milk, whatever you have), and 1 teaspoon of vanilla extract. Remember, just three bananas, I made the mistake of using more on one occasion. Using more does not make the bread better.
Finally, add the medium bowl to the large bowl and mix on low speed. Gradually add the mashed bananas as well. Beat well.
Use any baking pan, but it must be at least 2 inches deep. Put the mixture in the pan and you are ready to bake. Bake 40-45 minutes on 350 degrees. Check after 40 minutes with a toothpick or butter knife. If it comes out clean pull it out of the oven and let it cool for at least twenty minutes before serving. This stuff is the best!
One final tip: you might want to line your baking pan with foil for easier clean up and removal from the pan itself. You can also add powdered sugar to the top of the loaf when it’s finished cooling.
