- 60g blanched slivered almonds
- 4 tablespoons mayonnaise
- 1 tablespoon lemon juice
- freshly ground black pepper to taste
- 315g cooked chicken meat, chopped
- 1 stick celery, chopped
Take a non stick frying pan and put 60g blanched slivered almonds in it. Toast these almonds over medium-high heat and keep shaking them frequently during this process. However, toast almonds carefully as they can burn quite easily.
Then grab a medium size bowl and combine together 4 tablespoons mayonnaise, 1 tablespoon lemon juice and freshly ground black pepper to taste in it.
When this mixture of mayonnaise gets ready, then add 315g chopped and cooked chicken meat along with toasted almonds and 1 stick chopped celery.
Toss all these ingredients well and then top it with lettuce leaves before serving. You can also use this salad as a sandwich filling.
