Asian Asparagus Salad with Pecans Recipe

This Asian delight uses Fresh Asparagus and turns it into a yummy treat in a marinade of vinegar, olive oil and vegetable oil. Plan it in advance because it tastes best when you allow it to marinade for full 24 hours. However, the salad is worth the wait and is made to complement special events like Thanksgiving dinner, Christmas eve and family get together. The pecans add nutty texture to the salad while the Asparagus brings a rich taste of the marinade. Utensils needed: Saucepan, resealable plastic bag and salad bowl

Ingredients:

-1 pound fresh asparagus, trimmed
-2 tablespoons rice vinegar
-2 tablespoons soy sauce
-1 tablespoon vegetable oil
-1 teaspoon sugar
-salt and pepper to taste
-1/4 cup chopped pecans
-1-1/2 teaspoons chopped green onions (for garnish)

    Boil water in the saucepan. Add the Asparagus and cook until they are tender. However, they also be crisp to the bite. Drain the hot water out and put the Asparagus in a pot of cold water for a while so that they cool down.

    Take a large resealable plastic bag. Put in it the rice vinegar, soy sauce, vegetable oil, sugar, salt, and pepper. Freshly ground pepper has a great taste and an aroma that makes the whole meal smell much more exciting. Put the Asparagus into this bag and seal it. Place the bag in the refrigerator and let it marinade for complete 24 hours.
