Banana Wheat Bran Muffins Recipe

A muffin is a type of cake, which is served to one person, and is similar to cupcakes. However, the main difference between the two is that they are less sweet and have no icing on it.

There are several varieties of muffins around the globe, and they can be served in breakfast as well as a genuine dessert after the dinner or a snack at tea.

The most important aspect of this delicious recipe is that even the dieters can have a bite of it, as it is not a very high calorie dessert.

Ingredients:
Eggs: 2 large
Packed light brown sugar: 2/3 cup
Mashed ripe bananas, (2 medium): 1 cup
Buttermilk, (see Ingredient notes): 1 cup
Unprocessed wheat bran, (see Ingredient notes): 1 cup
Canola oil: 1/4 cup
Vanilla extract: 1 teaspoon
Whole-wheat flour: 1 cup
All-purpose flour: 3/4 cup
Baking powder: 1 1/2 teaspoons
Baking soda: 1/2 teaspoon
Ground cinnamon: 1/2 teaspoon
Salt: 1/4 teaspoon
Chocolate chips, (optional): 1/2 cup
Chopped walnuts, (optional): 1/3 cup

    In order to get started, preheat the oven to 400 degrees F.

    Take 12 muffin cups, and coat them slightly with a cooking spray.

    Break the eggs in a medium bowl, and add brown sugar in it. Stir it together until the mixture becomes smooth. Add bananas, buttermilk, wheat bran, oil and vanilla in the mixture, and whisk it together properly.

    Take a large bowl, and add whole-wheat flour, all purpose flour, baking soda, baking powder, cinnamon and salt. Now whisk all the ingredients together, and then make a well in the mixture. Add the wet mixture into it, and beat them together with a rubber spatula until they are completely mixed. Add chocolate chips if using and stir them properly. Now scoop the batter into the coated muffin cups. Sprinkle the walnuts at the top of it if using.

    Put the muffins in the preheated oven, and bake them for about 15 to 20 minutes until a golden brown top is achieved. Let it cool for some time before taking them out of the cups. Serve as you need.
