Beetroot, Green Bean and Apple Salad Recipe

Salads are an important part of meals and are served either before meals as appetizers or between them as a side dish. These salads usually consist of either fresh or canned veggies or fruits. Salads are always good for all those who want to loose weight or who are already following some kind of a diet plan as these will never increase their waist inches.

Beet root, green beans and apple salad is one such salad that is very light and can be served as a side dish together with anything like grilled meats or rice.

Refrigeration Time: 50 minutes
Serving: 3 to 4 persons
Utensils: Frying Pan, Salad Serving Bowl, Salad Serving Spoon, Standard Chopping Knife, Chopping Board.
Ingredients:

– 3 beetroot
– 1 cup leeks
– 3 apples
– 1 cup green beans
– 6-7 green chilly
– 1/2 bunch Coriander
– 1 bunch Parsley
– ½ cup Lime Juice
– 1/3 cup of olive oil
– Salt (To taste)
– Grounded Black Pepper (To taste)
– Grounded Red Chilly (To taste)

Instructions

    Before getting started, it is important that all the vegetables are fresh and washed properly.

    Heat olive oil in a frying pan and add all the green beans together with a pinch of salt and grounded black pepper in it. Fry until they get a little crispy. This will take 10 minutes.

    In the meanwhile peel the beet roots and then chop them in small cubes. Also take the apples, peel and core and finally chop them in similar shapes as those of the beet roots.

    Next take the green chilies, core and dice.

    Also chop the leek in fine rings.

    By that time, the green beans will almost be done. Now set aside all the chopped vegetables and take out the fried green beans and drain. Let them cool down for 5 minutes.

    Take the serving bowl and add all the stuff in it.

    In the end, add grounded black pepper and red chilly along with salt, lemon juice, parsley and coriander and toss well.

    Refrigerate and serve when chilled.
