There are many salads in which Chicken is the main ingredient. One such salad is known as Chicken Curry Salad that is comprised of a number of useful and delicious edibles apart from Chicken. The good thing about this salad is that it is a healthy, nutritious and most importantly; a complete meal within itself. People who are health conscious or are involved in workout activities can conveniently include this in their diets. The salad was introduced some 20 years back and can be easily prepared at home. Make sure you have the below given ingredients available before you follow the preparation guidelines for Chicken Curry Salad.
Preparation Time: 1 hour
Serving Size: 06 persons
Utensils: Thick-bottomed Saute’ Pan or Sheet pan, table spoon, Standard sized bowl, Stirrer, sharp knife, slotted spoon
- Olive Oil (2 table spoons)
- Half cooked skinless & boneless Chicken Breasts cut into 1 inch cubes (4 pieces)
- Salt (as desired)
- Roughly chopped yellow Onion (1 only)
- Yellow Curry Powder (2 full table spoons)
- Raisins (1 cup)
- Apple (1 only – cut into small cubes)
- Chopped fresh cilantro (½ Cup)
- Sliced Green Onions ( 2 only)
- Mayonnaise (1 full tablespoon- optional)
Pour some Olive Oil in a Thick-bottomed Saute’ Pan and add chicken pieces into it. Sprinkle salt on the chicken pieces with frequent stirring and cook for about 5 minutes.
Check one piece of Chicken if it is properly cooked by cutting it in half. If you feel that it is properly cooked, remove the chicken pieces with slotted spoon and set them inside a bowl.
Now add the yellow onion into the pan containing Olive oil and once you see the onions start getting translucent, add 2 spoons full of curry powder into it. Keep cooking for a few minutes with continuous stirring.
Add raisins to the pan and cook for a few minutes. After that, add this mixture of raisins and onions to the bowl containing chicken. Mix thoroughly till the chicken pieces become well coated with the curry.
Once you are done with the above step, put the bowl in refrigerator and allow it to cool. Add apple, green onions and sprinkle cilantro just before serving.
