Curried Chicken Salad on Naan Bread Recipe

Ingredients:

– 2 chicken breasts
– 1L chicken stock
– 225g low-fat plain yoghurt
– 2 teaspoons grated lime zest
– 2 teaspoons lime juice
– 1 teaspoon curry powder
– 4 tablespoons sliced green onions
– 4 tablespoons sliced red and green pepper
– 4 tablespoons sliced celery
– 2 tablespoons chopped coriander, plus 4 whole sprigs
– 1/2 teaspoon salt
– 4 tablespoons chopped cashews
– 4 naan breads

    In order to make this salad, first take the chicken and wash it, then trim it. After that put both stock and chicken in a pan to bring them to boil and then allow the chicken to cook thoroughly for roughly 20 minutes.

    Blend together the lime juice, lime zest, curry powder and yogurt. Add celery, chopped coriander, peppers, salt and green onions in this mixture while the chicken is still being cooked.

    After the chicken is cooked, take it out of the pan and allow it to cool. Then take a knife and cut the chicken in cubes. Now dip the cubes in the yogurt mixture.

    Now take naan breads and put them directly in the microwave oven by setting it on 180 C or Gas 4. The naan breads will receive heat until they are flexible and warm, but do not let them become brittle and crunchy.
