Cakes are a wonderful way of expressing joy, happiness or celebrating any anniversary or successful event. There are hundreds of different types of cakes made in all parts of the world as per the culture and tradition of each area. Victoria sponge cake is one of the oldest desserts, made with whole eggs, sugar and butter for centuries.
Ingredients
  • White sugar - 1 cup
  • Butter - 1 cup
  • All-purpose flour - 2 cups
  • Baking powder - 2 tsp
  • Eggs - 4
  • Heavy whipping cream - 1 cup
  • Sugar - 2 tsp
  • Vanilla extract - 1 tsp
  • Strawberry preserves - 1 jar
  • Powdered sugar - 1 cup
  • Fresh strawberries for garnishing
Instructions
  1. The first step towards making a sponge cake is to preheat the oven at 375 degrees F.
  2. You can now set aside the baking pans after spraying them with cooking spray.
  3. With a low speed mixer, you are required to cream the butter.
  4. After adding ΒΌ cup of white sugar, you should mix everything nicely until they it is light and fluffy.
  5. Add eggs one by one after beating them thoroughly.
  6. Sift the flour and baking powder together in a separate bowl. You can make the final batter by slowly folding it in to the egg and butter mixture.
  7. Having poured the mixture into the pan, bake it for 25 minutes.
  8. The top of the cake should be light brown after baking and you can use a toothpick to test the cake.
  9. You can place the pan at a cool place for about 10 minutes before putting it to a wire rack for final cooling.
  10. Until it gets into a soft peak form, you may whip together the sugar, whipped cream and vanilla.
  11. You can now spread strawberry preserves on top of the cake and then follow it up with some whipped cream filling.
  12. You may now add another layer by turning over the second cake section and brush on strawberry preserves.
  13. For final decoration, you can sift powdered sugar on top of the cake.
  14. After cutting the wedges and garnishing with fresh strawberries, you can serve your lovely Victoria sponge cake.
