Thick, creamy and comforting, cream of mushroom soup is one of those dishes you are likely to find yourself craving when winter comes around and chilly winds begin to blow. Many do not realise that cream of mushroom soup is surprisingly easy to make and can be whipped up at home using a few simple, commonly-used ingredients.
Ingredients
  • Fresh mushrooms - 8 ounces
  • Onions, chopped - 2 tablespoons
  • Garlic clove, minced - 1 -2
  • Butter - 2 tablespoons
  • Flour (separated) - 3 tablespoons
  • Chicken broth - 2 cups
  • Light cream or evaporated milk - 1 cup
  • Salt - ½ teaspoon
  • Pepper - ¼ teaspoon
  • Nutmeg - ¼ teaspoon
Instructions
  1. First prepare the mushrooms: buy the freshest ones and was them off thoroughly before you begin working on them.
  2. Cut them in whichever style suits you; slicing them up is preferable.
  3. Place a large pan on the stove over medium heat.
  4. Add butter and melt it.
  5. Toss in the garlic, onions, and mushrooms.
  6. Sautee until the onions are softened, and the garlic and mushrooms are cooked.
  7. Once the vegetables have softened, add in two tablespoons of flour, and stir it into the mixture.
  8. Pour in the chicken broth and warm it through stirring continuously until it begins to thicken.
  9. Mix the cream, salt, pepper, and nutmeg together in a bowl, along with the remaining one tablespoon of flour.
  10. Pour this into the broth.
  11. Cook the soup over a medium flame until it begins to heat up and thicken in consistency, making sure you stir frequently.
  12. Ladle into your favourite soup bowls and serve hot.
