Most of you will be familiar with the term 'Eat your peas to remain healthy', so yes! The soup here uses split peas and several vegetables and herbs to give your taste buds a rare treat.
Ingredients
  • Onion - 1 large
  • Stalks celery, diced - 2
  • Grapeseed oil - 1 tablespoon
  • Fresh thyme - 3 tablespoons
  • Mirin - 3 tablespoons
  • Toasted croutons for garnish
  • White pepper and sea salt
  • Green split peas - 3 cups
  • Vegetable stock - 10 cups
  • Meyer lemon (zest and juice) - 1
Instructions
  1. Place the cooking pot on medium heat.
  2. Pour the oil in it followed by onions and celery.
  3. Sauté them for up to four minutes or until you feel they have gone soft.
  4. Add thyme and mirin and mix in well.
  5. Season it with salt and pepper according to preference.
  6. Sauté everything for two more minutes.
  7. Rinse the split peas that you have.
  8. Look for any stones or any other foreign matter.
  9. Add them to the pot of sautéed vegetables and mix in well.
  10. Add stock to the pot to a level where the peas are covered by it.
  11. Cover the pot.
  12. Reduce the heat to a simmer level and let the soup cook for around two hours.
  13. During this time, you can do any other task.
  14. Stir occasionally to avoid any burn.
  15. After this time or when the peas appear soft, remove from heat.
  16. If you feel the peas are not soft enough, make a puree out of them in the handheld blender.
  17. Pour in the serving bowl and mix in the lemon juice.
  18. Season it according to taste.
  19. Do a taste check before serving.
  20. Garnish with lemon zest and croutons to enhance appeal.
