Adding tomatoes to boneless chicken surely adds a lot of flavour and health. Tomatoes have the ability to enhance the taste of any chicken dish. The best part of the dish is its flexibility. You could use any marinade you want and experiment with different spices. The tomatoes can also be either fresh or canned. The meal can be made under half an hour and will surely be loved by family friends. Be ready to give second servings.
Ingredients
Boneless (and skinless, if you wish) chicken pieces - 3 pounds
Seasoned breadcrumbs, preferably Italian seasoned
Eggs or egg substitute - 2 medium
Rock salt and freshly cracked black pepper
Ripe tomatoes or 1 medium can of diced tomatoes - 5 pieces
A dash of balsamic vinegar
Olive oil, extra virgin
Garlic powder
Minced garlic - 2 tablespoons
Fresh basil and flat leaf parsley, roughly chopped
Instructions
Start by preparing the chicken.
Take out the chicken breast pieces and check if they are of equal size and thickness.
If you want them thinner, pound them more.
Wash the chicken and clean it thoroughly so that all the fat is removed.
Take a mixing bowl and break two eggs in it, whisk them until they are mixed well.
Dip the chicken cutlets in the egg and then in the pipe of bread crumbs in another plate.
The bread crumbs should have salt and pepper added to it.
Do this for all the breasts and put them on one side.
Put a heavy bottom pan on medium high heat and drizzle some olive oil in it.
Place the chicken cautiously, it should not overlap.
Fry till it is even in colour and golden brown.
Do not stir the chicken while it is frying as the coating will come off.
Cook it for 3-4 minutes on each side. Put the chicken on a paper towel to drain.
To prepare the topping, mix the chopped basil, parsley and tomatoes in a bowl.
Sprinkle some vinegar and olive oil on it; also add the spices at this point.
Let it rest for 10 minutes so that the flavours are completely absorbed.
To assemble the dish, place the fried chicken on a flat plate.
Top it with some of the tomato relish.
You can garnish it with chopped cilantro to add flavour and colour.
