    Soak the chips

Before you use wood chips to cook food, it is important to soak them thoroughly in water, or some other sort of liquid, for around 30-45 minutes. This will increase their longevity when the are tossed onto the fire and make sure that they do not burn, all the while creating plenty of smoke that will enhance the flavour of the foood. If you wish to be a little creative, you can add a superb flavour to your food by soaking the wood chips in apple juice, brandy, wine, or other flavourful liquids, as opposed to just water. How to use wood chips in a charcoal grill

Place the wood chips on the charcoal in the grill directly, but make sure the coals have turned grey before you do so - if you toss them onto hot, orange coals, you will burn the wood chips to cinders. If your grilling time is less than 10 minutes, it is safe for you to use wood chips; however, if you want to cook longer, it is highly recommended that you use wood chunks instead of chips, as these will be sturdier and will last longer on the coals.

How to use wood chips in a propane grill

You will need to place the wood chunks all around the meat, on the grilling surface of your propane grill. Normally, wood chips are not added into the burner of the propane barbecue; therefore, placing the chunks alongside the meat is the right option. While the wood is burning and smoking, you will need to keep the lid on your grill closed tightly, in order to allow the food inside to absorb all the amazing flavour and aroma.

However, while using wood chips, you will need to be extra careful, as chips are far more delicate than wood chunks. Having wrapped the chips in aluminium foil in order to create a sort of parcel, you will need to punch several holes in it - you can do this by piercing it with a fork a couple of times. You will then need to place the foil parcel on top of the grill close to the food, or you can choose to position it under the grill near the flame. Then, close the lid and let the chips smoke away - the food inside will soak up all the flavour and scent.
