This Broccoli and Cheese soup recipe is effortless, luscious and filling. It is yummy option to dish up prior to meal or at luncheons and special get-togethers. Moreover, serving the Broccoli and Cheese Soup along with warm fresh bread and tartlet can make a hearty main course. The creamy cheese base adds up a filling texture to the crusty ingredients of the soup. In order to give your Broccoli and Cheese Soup a little fancier finishing touch, sprinkle some mushroom slices, white wine and finely chopped mint leaves.
Ingredients
  • Butter – ½ cup
  • Onion (finely chopped) – 1
  • Frozen (chopped broccoli – 1package
  • Chicken broth – 4 cans
  • Processed cheese food (cubed) – 1 loaf
  • Milk – 2 cups
  • Garlic powder – 1 tablespoon
  • Water
  • Cons starch – ⅔ cup
  • Ginger matchsticks for garnishing - Optional
Instructions
  1. Melt ½ cup of butter by adding it into a large saucepan or stockpot and placing on a stove with medium heat.
  2. Add in 1 finely chopped onion and stir-fry it until tender.
  3. Stir in 16 ounce of frozen and well chopped broccoli and top with 14.5 ounce of chicken broth.
  4. Half cover the pot and let the broccoli-butter mixture simmer for the next 15 to 20 minutes or until the tenderness of the both ingredients.
  5. Now reduce the heat of your stove to medium low range and add the processed cheese cubes into the mixture. Use a wooden fork to lightly stir the mixture until the cheese melts completely and adds a rich texture.
  6. Gently stir in 2 cups of milk and 1 tablespoon of garlic powder. Continue mixing until it forms a smooth mixture and let it simmer for 3 to 5 minutes at low heat.
  7. In the meantime, grab a medium mixing bowl and blend together some water and ⅔ cup of cornstarch until form a thick paste.
  8. Stir the cornstarch mixture into the soup and cook it until thick and smooth, stirring constantly.
  9. Remove the pot from heat and pour the Broccoli and Cheese Soup into a large soup bowl. Sprinkle some fresh ginger matchsticks or finely chopped mint leaves.
  10. Set the bowl of warm Broccoli and Cheese Soup on the table and place 12 small soup bowls all around it. Let your guest serve themselves according to their desire. Enjoy some nice complements for your cooking skills!
