Preparation time: 30 minutes
Serving size: 24
Utensils needed: baking sheet, knife, bowl, microwave oven, refrigerator, airtight container (optional)

Ingredients:

- 1/2 small pineapple - sliced into 24 bite sized slices
- 2 large bananas - sliced into 24 bite sized pieces
- 12 small to medium sized fresh strawberries - sliced in half
- 150g / 5oz fine quality dark chocolate
- 2 teaspoon coconut oil

Instructions

  • 1

Cut ½ of the small pineapple into 24 bite-sized slices and set aside.

  • 2

Now, peel two large bananas and slice them into 24 bite-sized pieces.

  • 3

Remove the stems of 12 small or medium sized fresh strawberries and cut them into half.

  • 4

Select 24 large toothpicks or ice cream sticks and insert three fruit slices to each of them, making a combination of pineapple, banana and strawberry.

  • 5

Arrange fruit inserted stick in a large serving tray, keeping some space in between. Now, set the tray in your refrigerator for some time until the fruit wedges are freeze and solid.

  • 6

In the meantime, prepare a baking sheet. Line a large baking sheet with a silicone mat, wax paper or a parchment paper and set it aside.

  • 7

Move on and melt the chocolate. Place the fine quality dark chocolate and the coconut oil in a medium bowl and set it in microwave oven. Carefully melt the chocolate while stirring frequently in order to prevent burning.

Note: You can also melt the chocolate with the help of a double boiler.

  • 8

Once the chocolate completely melts, remove it from microwave oven and place it on your kitchen table. Take out the frozen fruit sticks, dip them in the melted chocolate one by one, and drip off the excess chocolate for few seconds and arrange them in the previously lined baking sheet.

  • 9

Place the baking sheet in refrigerator to harden the chocolate thoroughly.

  • 10

Once the chocolate is fully hard-bitten, remove the Chocolate Covered Banana Split Bites from the baking sheet and set aside at room temperature for five minutes before serving them.

  • 11

If desired, place the Chocolate Covered Banana Split Bites in an airtight container and store in your refrigerator until serving. However, make sure to set them aside at room temperature for few minutes before serving them up.
