Total time: 35 minutes
Yields: 24 Cups

Ingredients:
All purpose floor: 3 cups
White sugar: 2 cups
Coco powder: 1 tsp
Salt: 2 tsp
Baking soda: 2/3 cup
Oil: 2 cup
Water: 2 tbsp
Vinegar: 2tsp
Cream cheese: 8 ounce
Egg: 1
White sugar: ½ cup
Salt: ¼ tsp
Chocolate chips: 1 cup

Instructions

  • 1

Put the oven on preheat at 350 degrees F or 175 degree C. Take a muffin sheet and line it with cup cake liners - if you do not have these, you can grease them with oil so that they do not stick to the bottom and burn.

  • 2

Take a mixing bowl of a large size and add flour, coco powder, 2 cups of sugar, all of the baking soda and 1 teaspoon of salt. Mix these dry ingredients together. Then, in the same bowl, add the oil, vinegar, water and some drops of vanilla essence if desired - mix it all together. Take the muffin sheet and fill the liners with the batter. It should be 2/3 full.

Now make the surprise filling of the cupcakes which gives them a unique twist and adds tremendous flavor to the cupcakes. Take a medium mixing bowl and add egg, cream cheese, ½ cup of sugar and ¼ teaspoon of salt. Beat these ingredients with a hand beater or an electric beater until the mixture is very light. Add the chocolate chips to the mixture and give it all a little stir.

Put a dollop of this batter in each filled liner - this should be around 1 tablespoon of the mixture. Bake the cupcakes in the oven for around 25 to 30 minutes. Do not keep opening the oven door in between. Take them out of the oven when they are done, and allow the cupcakes to cool before serving them. They can be served with vanilla ice cream, but they are rich enough on their own too.
