Take a saucepan and fill it with moderate amount of water in which your potatoes can easily soak. Place the water filled saucepan on the stove now take a peeler and peel of the skin of the potatoes.
When the water slightly comes to a boil then add potatoes in it. after 5 minutes check if they are soft enough that you can easily mash.
Remove water and mash the potatoes in a deep bowl now one by one add 4 chopped Green chilies, 1 teaspoon Black pepper, 1 teaspoon Cumin seeds, 1/2 teaspoon Crushed red chili, 1/2 teaspoon Salt, 2 tablespoon Cheddar cheese, 2 tablespoon Mozzarella cheese and 2 tablespoon Mint leaves. Mix them all together. its better if you mix them with your hands but you can also use a spoon.
Take slightly deep plate and fill it with drinking water. take fresh slices of bread and soak them once, then with the help of rolling pin flatten the Bread slices.
Take a moderate amount of the potato mixture and place it on the flattened bread slices then roll the bread carefully. make sure your bread does not breaks.
take a deep plate and beat two eggs in it. Take the rolls and dip them, then take another bowl and put a moderate amount of flour, roll the dipped roll fry it in hot oil. Delicious and crispy cheese rolls are ready to be serve with ketchup and fries.
