Pour some oil in a medium sized pan and place it over low heat. In order to make seasonings in sizzling oil, you will have to add in red chili powder, curry leaves, white cumin, mustard seeds and oregano.
Add in onions, tomatoes and garlic and sauté for few minutes before adding in salt, red chili powder and turmeric.
Now take a separate pan and mix together the peas, beans, carrot, potatoes and sweet corn in it. Cook the ingredients for a few minutes, until they become tender. Now add in capsicum and mushrooms and cook for another few minutes until they become tender too. Mix the chicken stock cube in the vegetables to enhance the flavor.
Preheat the oven to 180 degree Celsius.
Now pour water and oil into a large bowl and place it over low heat. Add in lasagna strips to the boiling water and cook for around 15 to 20 minutes.
Grease a baking tray and place lasagna sticks on it, before pouring tomato ketchup, vegetables, oregano leaves and white sauce over the sticks.
Place the tray in the oven and bake for around 20 minutes. Take the tray out and garnish with lemon grass before serving your vegetable lasagna.
