Take a large mixing bowl and mix honey, yeast and a half cup warm water in it. Let it stand for around 5 minutes till it gets foamy. If the foaming doesn’t take place, then start again with new yeast.
In another bowl, put the flour. Take a half cup of flour from here, put it in the yeast and whisk it. Cover it with plastic and let it stand at room temperature for 50 minutes until the mixture doubles and becomes bubbly. Add in the salt, oil, ¾ cup warm water and the remaining flour. Dough will form
Take out the dough and knead it on a floured surface. Keep adding more flour if the dough is too sticky. Knead it for 8-10 minutes. Put the dough in a greased bowl and cover it with plastic. Let it stand for an hour in a warm place until it doubles in size.
Punch the dough to take out the air and cut it into 8 pieces. Form a ball of each piece and flatten it. Form a round of 7 inch with a rolling pin. Prepare a baking sheet by sprinkling with cornmeal. Arrange the pitas on the baking sheet. Cover them with the towel and let them rest for half an hour.
Preheat the oven to 500 degrees and set the rack of the oven on the lower third. Put four pitas at a time in the oven tray. Bake them for two minutes until they are puffed. Flip them and bake for one more minute. Cool them on the rack and then bake the other four pitas. Serve them straight away.
