Lebanese Bulghur Wheat and Feta Salad Recipe

The bulghur not only provides the base for the salad but also brings with itself a lot of fibers into our food. In this recipe, it is combined with herbs, olives, vegetables and feta to make a delectable dish that is hearty enough to make a meal for you.

The dressing poured over the salad makes all the difference and gives us a unique taste. The salad is low in fat and does not include any cooking using oil, a plus point for the health conscious people out there. Utensils needed: pan, large heat proof bowl, small mixing bowl

Ingredients:

– 200g bulghur wheat
– 600ml boiling water
– 125g green beans, halved
– 2 tbsp olive oil
– juice of 1 lemon
– 1 tsp each ground cinnamon, cumin and coriander
– 25g chives, snipped
– 10g fresh coriander, chopped
– 10g fresh mint, chopped
– 12 stoned black olives, sliced
– 3 tbsp sliced marinated or roasted peppers
– 1 beef tomato, chopped, or 250g cherry tomatoes, halved
– 150g feta cheese, crumbled

    Boil the water in the pan. Put the bulghur wheat in to a heat proof bowl and cover with the boiling water. Add 1 tablespoon of salt. Let to stand for 20 minutes or until the grain goes tender but is still firm to the touch. Use a fork to fluff up the grain.

    While the bulghur is in the bowl, make the beans. Boil them in a pan of water for two minutes. Drain the water, rinse the beans under cold water and let them cool in a separate bowl. You can also use the microwave for cooking them.

    Make the dressing in the small bowl now. Whisk together the oil, lemon juice, spices and a little salt and ground black pepper. Mix well so that an even dressing is prepared. Pour it into the bulghur and stir lightly to mix in.

    Add the green beans into the bulghur followed by the chives, olives, herbs, peppers and chopped tomatoes. Top up with the feta cheese and use a fork to mix everything lightly. The salad is all ready to please everyone around you.
