Utensils needed: Pan, mixing bowl, spoon and salad platter.
- 3 bags fresh rocket
- 1/4 kg mushrooms
- 200 g fresh pepper, sliced
- 1 red chili , seeded and sliced
- 50 g basil leaves, ripped to smaller pieces
- 2 garlic cloves, chopped
- 1 tablespoon lemon juice
- 4 tablespoon olive oil
- Parmesan cheese (as desired for topping)
Cut the mushrooms into smaller pieces. Now saute them for a while in oil in a pan till they are tender. Do not over fry or else they will lose their fresh texture and taste.
Put these mushrooms in a a mixing bowl and add the rocket, red pepper, garlic, basil and chilli in no particular order. Toss well to get the ingredients evenly spread.
Add the lemon juice and oil to this bowl and mix well to get an even taste. Shave off the cheese over the salad depending on how 'cheesy' you want to make it.
