Prawn and Avocado Pasta Salad is one among the super flavorsome and nutritious summer dish. You can serve it as light meal, side dish or can take it to your workplace and outings. Moreover, this amazing blend of the prawns, fresh avocado slices and the cheese is a significant entree any time throughout the year.

Utensils: saucepan, serving bowl or platter, spoon, fork, etc
- 375g pasta shells
- 750g medium cooked prawns
- 250g yellow teardrop tomatoes - finely halved
- ½ cup small fresh basil leaves
- 50g baby rocket leaves
- 1 small (about 100g) red onion - sliced thinly
- 1 medium (about 250g) avocado - sliced thinly
- ½ cup (about 125ml) avocado oil
- ⅓ cup (about 80ml) white wine vinegar
- 2 teaspoons mustard - Dijon mustard is preferred
- 1 clove garlic – finely crushed
- Salt and freshly ground black pepper
Cook the pasta
Take a medium saucepan and pour in some cold water, keeping your requirement in mind. Add in some salt and set the saucepan on stove. Wait until the water starts boiling and add in the pasta. Cook it for 10 to 12 minutes or until tender. Remove the saucepan from stove, gently drain the cooked pasta with a large sieve and rinse them under cold water. Now, drain them again and set aside to cool.
Note: If you are not sure about the cooking procedure of the pasta, then simply follow the instructions given on the packet.
Prepare the prawns
Meanwhile, prepare the prawns. Peel the cooked prawns with a knife and cut them into halve lengthways. Set the prawns aside for some time until you mix up the ingredients of the dressing.
Make the salad’s dressing
Seize a screw-top jar and pour avocado oil into it. Top with white wine vinegar, mustard, and the finely crushed clove garlic. Season with some salt and freshly ground black pepper. Seal the jar properly, hold it tight using both hands and shake it vigorously until ingredients mix up completely.
Mix up the ingredients
Place the cooked pasta and the prawn’s slices in a large serving bowl or a platter. Add in finely halved yellow teardrop tomatoes, avocado slices, fresh basil leaves, baby rocket leaves, and the red onion slices. Toss or simply mix the ingredients with a large fork.
Pour in the dressing
Drizzle the dressing all over the salad and toss the ingredients very lightly.
