Romanian Potato Salad is a classic Romanian dish, a huge hit over the past many years. It is made of cooked potatoes with onions and bell peppers dressed with a mix of olive oil, vinegar, paprika and parsley. A few ingredients are optional though, because it all depends on your own taste.
This salad is very similar to the Bulgarian Potato Salad, and the Serbian Potato Salad. There is no need to use mayonnaise for either of these, but one can always make a dressing with salt, oil and vinegar to enhance the taste.
Majority use this salad as a side dish, as it looks great with fried fish or schnitzel. However, one can also consider it as a complete meal itself. It is very easy to prepare. Within 10 minutes, even a kid can make this delicious yet healthy food.
Over the years, many dieticians have shown concerns over the excessive use of potatoes, as they carry plenty of protein. They believe that a potato adds fat to your body.
However, the situation has completely changed now. A lot of people use potatoes for dieting these days. As far as the Romanian Potato Salad is concerned, it is indeed healthy.
Prep Time: 10-15 minutes
Serving Size: 02 servings
Utensils: Knife, a couple of bowls, spoons, kitchen towel paper and burner.
- 6 large potatoes, cooked in their jackets then peeled and sliced into rings
- 60ml olive oil
- 120ml cider vinegar
- 1 tsp paprika
- 2 tbsp fresh parsley, minced
- 1 large red onion, sliced into rings
- 2 red bell peppers, sliced lengthways into thin strips
- 2 hard-boiled eggs, sliced into rings
- 1 tbsp paprika salt and freshly-ground black pepper, to taste
First of all, boil the potatoes and peel them gently. However, keep them warm in the bowl.
Add salt and pepper as per your taste. Set aside the bowl, making sure that the potatoes stay warm.
In the meantime, mix together oil, vinegar, paprika and parsley in a jar with lid.
Fit a tough-fitting lid, and shake all the ingredients very well. Make sure that all the stuff is well mixed. Keep shaking until it is completely combined.
Now, pour the mixture on the potatoes. Transfer the material to a serving bowl. Spread onions and red bell peppers on top of the potatoes.
Cover the salad and put it in the refrigerator at least for an hour. This step is optional though.
Add eggs at the time of serving. Also scatter the paprika over the top of it. Be very gentle while tossing.
