First of all, boil the potatoes and peel them gently. However, keep them warm in the bowl.
Add salt and pepper as per your taste. Set aside the bowl, making sure that the potatoes stay warm.
In the meantime, mix together oil, vinegar, paprika and parsley in a jar with lid.
Fit a tough-fitting lid, and shake all the ingredients very well. Make sure that all the stuff is well mixed. Keep shaking until it is completely combined.
Now, pour the mixture on the potatoes. Transfer the material to a serving bowl. Spread onions and red bell peppers on top of the potatoes.
Cover the salad and put it in the refrigerator at least for an hour. This step is optional though.
Add eggs at the time of serving. Also scatter the paprika over the top of it. Be very gentle while tossing.
