Smoked Mackerel and Beetroot Salad Recipe

The mackerel adds the substance while the beetroot makes it all the more appealing with its taste and color. The lime along with the horseradish brings a tangy flavor to the meal. – 200g fat-free fromage frais
– grated zest and juice of 1 lime
– 2 tsp horseradish sauce, or to taste
– ¼ cucumber, diced
– 340g smoked mackerel fillets, skinned and flaked
– 2 x 400g cans cannellini beans, drained and rinsed
– 400g cooked beetroot, peeled and cubed
– 100g mixed salad leaves (such as rocket, mizuna, baby spinach or lamb’s lettuce)
– 1 red onion, thinly sliced
–  Lime wedge (to garnish)

    In a large mixing bowl, combine the fromage frais, lime zest, half the lime juice and horseradish. Add the cucumber to this mixture and stir well.

    Next comes the turn of the mackerel. However, first check for any bones in it and add only after clearing them. Add in the cannellni beans and stir so that everything blends well.

    In another mixing bowl, toss together the salad leaves with onions and the remaining lime juice. Arrange these on a salad platter and scoop up the mackerel mixture on them.

    Top the mixture up with beetroot and garnish with the lime wedges.
