Spinach Pea and Red Onion Salad Recipe

Ingredients:

– 75g (3 oz) fresh spinach leaves, washed and drained
– 1/4 medium sized red onion, finely sliced
– 120g frozen peas
– Juice of 1/2 lemon
– 1 tablespoon chopped fresh chives
– 2 tablespoons chopped fresh mint
– 1 1/2 tablespoons extra-virgin olive oil
– Salt and pepper to taste

    Take 120g frozen peas and sauté them as per the instructions given on its packaging, then drain them let it cool down.

    Then take a large bowl in which combine 75g (3 oz) washed and drained fresh spinach leaves, 1/4 finely sliced medium size red onion, 1 tablespoon chopped fresh chives and 2 tablespoons chopped fresh mint.

    After all the ingredients gets combined together. Then squeeze the lemon juice over this mixture, after which sprinkle olive oil on it and afterwards toss these ingredients until they get coat completely, just before serving this salad. Also do not forget to add salt and pepper in this dish to taste after which this delicious salad is ready to be served at once.
