Prepare the salad
Take a large serving bowl or platter and add in 2 cups of cooked couscous. 6 finely chopped green onions, chopped slices of 2 medium fresh tomatoes, 1 cup of nicely chopped cucumber and ½ cup chickpeas pre-cooked or canned chickpeas. Sprinkle 1 cup of finely chopped fresh parsley all over the mixture and whisk all of the ingredients until mix well. Set this bowl aside to marinate, till then you make the dressing for the salad.
Prepare the dressing
Pick a small mixing bowl and pour in ¾ cup of olive oil, ½ cup of lemon juice, 2 nicely minced cloves garlic, 1 teaspoon of mustard, and 1 teaspoon of chopped coriander. Season with some salt and pepper to taste. Now, pick a large spoon or whisk and mix all these ingredients until incorporate well and form a thick dressing.
Mix the salad and dressing
Drizzle the dressing over the salad in the large bowl and stir the ingredients until coat well.
