Warm Lentil and Roasted Pepper Salad Recipe

Ingredients:

– 3 cups water
– 1 cup brown lentils
– 1 teaspoon salt
– ¼ cup parsley – finely chopped
– ½ cup canned roasted sweet red pepper – diced, drained, and rinsed
– 1 medium stalk celery – diced
– ½ cup red onion – diced
– 1 cup plum tomatoes – diced and seeded
– 2 cloves garlic – minced
– 2 tablespoons lemon juice
– 2 tablespoons olive oil
– ¼ teaspoon black pepper
– Lemon wedges for garnishing – optional

    Pick a medium non-sticking saucepan and pour in 3 cups of cold water. Add in ½ tablespoon of salt and set the saucepan on stove with a high heat.

    Wait until the water starts boiling and add one cup of the brown lentils into it.

    Now, reduce the heat of the stove to medium-low and cover the sauce pan by placing its lid on the top. Let it simmer 25 to 30 minutes or until the lentils are lightly firm but thoroughly cooked.
