Winter Fruit Salad with Lemon Poppy Seed Dressing Recipe

Utensils needed: food processor, large salad bowl

Ingredients:

1/4 cup white sugar
-1/4 cup lemon juice
-1 teaspoon diced onion
-1/2 teaspoon Dijon-style prepared mustard
-1/4 teaspoon salt
-1/3 cup vegetable oil
-1-1/2 teaspoons poppy seeds
-1/2 head romaine lettuce, torn into bite-size pieces
-2 ounces shredded Swiss cheese
-1/2 cup cashews
-2 tablespoons dried cranberries
-1apple – peeled, cored and diced
-1 pear – peeled, cored and sliced

    Take your blender or food processor out. Add sugar, lemon juice, onion, mustard, and salt and get it running. While the processor is still running, add oil slowly to the mixture to form a creamy thick paste. Now, insert the poppy seeds and process well. Drain into a bowl for later use.

    Combine the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear in a salad bowl. Toss them well together and pour the dressing over them. Stir well so that the dressing gets coated over the salad. Serve right away. Perfect for a winter evening.
