One of the best ways of making boneless chicken breasts is to wrap them in bacon strips. Bacon wrapped chicken is a super delicious recipe in which chicken fillets are stuffed with a creamy filling and then wrapped in a bacon slice. This combination is then baked with gravy for about an hour.
Ingredients
Skinless, boneless chicken breast halves - 4
Cream cheese (sliced) - ½ (8 ounce) package
Bacon - 4 slices
Chopped fresh chives - 1 tsp
Condensed cream of chicken soup - 1 (10.75 ounce) can
Mayonnaise - ½ cup
Milk - ½ cup
Lemon juice - 1 tsp
Ground black pepper - ¼ tsp
Salt - 1 pinch
Instructions
Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius).
If using frozen chicken breasts, thaw them properly before proceeding.
Take a chicken breast and place it on a clean, firm surface.
Cover the breast piece with a plastic wrap and pound it using a meat-pounding mallet.
Now take a bacon strip and place it over a flat preparation surface.
Drop a pounded chicken breast on the top of the bacon slice.
Put a slice of cream cheese and some chopped chives in the middle of the chicken breast.
Roll the chicken and bacon into a ball and insert a toothpick in the middle of the ball to hold it together.
Similarly wrap remaining three chicken breast fillets as well.
Set the bacon wrapped chicken breasts in a 9x13 inch baking dish, but do not squish them together since the dish will be filled with sauce.
To make the sauce, combine condensed cream of chicken soup, milk, mayonnaise and lemon juice in a medium sized mixing bowl. Season the sauce with salt and pepper and mix thoroughly until smooth.
Pour the sauce over the wrapped chicken balls and bake in the preheated oven for an hour.
