Potato pudding is one of the tastiest dishes. It is a perfect mix of sweet potatoes, butter, milk, eggs, vanilla extract, corn syrup, cinnamon and ginger. Furthermore, the praline topping adds extra taste to the pudding which is made up of pecans, ginger, sugar and butter. It is not very difficult to make. Ingredients
Potato Pudding -
Baked sweet potatoes pulp, scooped from the skin - 2½ cups
Packed light or dark brown sugar - ½ cup
Large eggs - 4
Milk - ⅓ cup
Unsalted butter, melted - 2 tbsp
Pure vanilla extract - 2 tbsp
Corn syrup, preferably dark - 1 tbsp
Light or dark rum - 1 tbsp
Salt - ½ tsp
Ground cinnamon - ½ tsp
Ground ginger - ½ tsp
Praline topping -
Chopped pecans - ½ cup
Chopped crystallized ginger - ¼ cup
Packed light or dark brown sugar - ¼ cup
Unsalted butter, softened - 2 tbsp
Instructions
First of all, you have to preheat your oven to around 350 degrees Fahrenheit.
Then, take the baking dish and spray some oil on it so that it becomes smooth.
Now take a bowl and add all the pudding ingredients in it.
Then, with the help of an electric mixer, beat all the ingredients well.
You have to beat the ingredients until they become soft and smooth.
Put the pudding mixture in the baking sheet and spread it with the help of a spatula.
Then, place the baking sheet in the oven and bake the pudding mixture for around half an hour.
Meanwhile, put the praline topping ingredients in a bowl and mix them well with each other.
Take out the pudding from the oven and sprinkle the praline topping.
Then, place the baking sheet again in the oven for around 25 minutes.
When the pudding becomes slightly puffed, take the baking sheet out of the oven and place it aside so that it may cool down.
The praline topping will sink into the pudding after a little while.
You can sprinkle mint leaves on the sweet potato pudding before serving.
Besides, you can also serve the pudding along with the mint sauce.
