Ingredients
  • Water - 1 ½ cups
  • Yeast - 2 packages
  • Sugar - 1 ½ ounces
  • Salt - ½ ounce
  • Bread flour - 3 ½ cups
  • Water - 2 quarts
  • Egg - 1
  • Ground Cinnamon, optional
  • Raisins, optional
  • Poppy seed, optional
  • Dried garlic, optional
  • Sesame seed, optional
Instructions
  1. Mix together 1 ½ cups of water, yeast and sugar in a bowl, using a whisk or clean hand.
  2. Carry on mixing until the sugar dissolves totally and forms a thick but smooth mixture (watery batter).
  3. Cover it and set aside.
  4. Grab another large bowl and put in 2 cups of bread flour. Sprinkle salt over the top and pour in the previously prepared yeast mixture.
  5. Now add in Ground Cinnamon, raisins, poppy seeds, dried garlic and sesame seeds – if you like. Use your hand to muddle up the ingredients, adding in the remaining bread flour according to requirement. Continue blending until it forms smooth batter with desired consistency.
  6. Scatter some flour on your work-surface and place the batter on the top.
  7. Now knead it for 5 to 8 minutes until firm, adding in flour (if needed).
  8. Put the dough into a greased bowl, cover with a plastic wrapping sheet or plate and leave to rise until double in size.
  9. Once the dough is double in size, punch it down on a floured surface and divide it into 12 equal size dough balls.
  10. Arrange the dough balls on a tray with cookie sheet and Leave the balls for 10 to 15 minutes.
  11. In the meantime, preheat your oven to 350 degrees and then pour 2 quarts of water into a pot or saucepan.
  12. Set the pan or pot on the stove and leave it to boil, setting the heat at medium-high range.
  13. Once the water starts boiling, reduce the heat to medium-low range and carefully place 3 to 4 dough balls in the pot or pan at a time.
  14. Get back to the dough balls and use your thumb to make medium hole in the center of each of them to give them bagel shape.
  15. Let the dough balls simmer 45 seconds to one minute, turning the sides occasionally.
  16. Drain the boiled dough balls well and arrange them on a large tray, lined with greased baking sheets.
  17. Now, crack one large egg into a small bowl and separate it white portion (albumen). Use a whisk or fork to beat egg white until water and foamy.
  18. Dip a pastry brush into the beaten egg white and brush the top of the boiled dough balls.
  19. Preheat your oven and bake for 30 to 35 minutes or until browned and shiny from all angles.
  20. Remove the Flavor Bagels from oven and place in the rack. Leave them until lightly warm.
  21. Serve your delicious Bagels straight away or store.
