Mac n cheese is the perfect comfort food. The richness of the dish makes it heavenly and hard to resist. The southwestern versions have been travelling in families for ages and still enjoyed to this day. The recipe is loved by all ages. It is a great meal in cold winters as it gives you warmth inside. It has simple ingredients and can be made fairly quickly.
Ingredients
Cubed cheddar cheese: 2 cups
Milk: 1 cup
Butter: 1 tablespoon
Jalapeño, with seeds: 1
Handful of fresh cilantro: 1
Cloves garlic: 3
Capers: 1 tablespoon
Molasses: 1 tsp
Sun dried tomatoes: 5
Dashes of cumin
Dashes of paprika
Dashes of curry
Dashes of chili powder
Crushed croutons: ½ cup
Your favourite macaroni: 1 lb
Instructions
Take a sauce pan and place it on low heat. Add the cheddar cheese, milk and butter. Give them a gentle stir to mix. Add jalapenos, cilantro, garlic, sun-dried tomatoes and capers in a food processor. Let the mixture process at least two times but it shouldn’t be smooth, let it remain coarse.
Add this coarse mixture from the food processor to the pot which has butter, cheese and milk. Let them simmer together on low heat for some more time. Give them a stir in between to avoid any lumps. Season the mixture with salt and pepper according to your taste. Try it and adjust accordingly. Also add the molasses.
Preheat your oven to 325 degrees for 15 minutes. Take a baking dish and spread some butter in it. Boil the macaroni in a pot of boiling water as stated to the directions on the back of the package. Drain it when it’s ready and put it in the baking dish. Pour the sauce mixture on top of the macaroni and stir it with a spoon to toss. Sprinkle the crushed croutons on top of it. Bake the dish for 20 to 25 minutes in the preheated oven and serve hot.
