Danish Pancake Balls, also known as Aebleskiver, is lauded as one of the most famous pastry balls in Denmark, because of their scrumptious taste and appearance. In Denmark, they are known as “Apple Slices”.
Ingredients
  • Apples, peeled, cored, pared, and chopped into ½” pieces: 2
  • Butter plus butter to grease aebleskiver pan: 2 tbsp
  • Cinnamon: 2 tsp
  • Eggs: 2
  • Sugar: 1 tbsp
  • Flour: 2 cups
  • Baking powder: 1 tsp
  • Buttermilk: 1½ cups
Instructions
  1. Take an aebleskiver pan and place it over medium heat. Take another pan and sauté apple pieces in 2 tbsp. Butter in it. Sauté the apples until they become softened, while remaining firm. Now sprinkle them with cinnamon.
  2. Separate the egg whites from yolks and beat them until white peaks are formed on the top. Now beat the yolks and add sugar. Create a creamy mixture. Add in flour and baking powder. Gradually add flour and buttermilk in the egg mixture. Fold in the egg white gently into the batter you just created.
  3. Now put ⅛ tablespoons of butter in each well in the aebleskiver pan that you placed over the medium heat. Use the pastry brush to grease each well with the butter you placed in them.
  4. Spoon the batter in each well. Make sure you fill half of the wells. You can take 1 tablespoon as an average. Now place apple chunk on each batter piece, before filling the wells completely. Cook them well, until the sides start turning brown.
  5. Insert a knife or any similar item at the side of each ball to take them out and turn over. Allow the pancake balls to cook for around 2 more minutes.
  6. Remove the aebleskiver from the stove and transfer it to a plate. Take powdered sugar and sprinkle it over the pancake balls before you serve.
