Take a fine sieve to rinse pearl barley, then pour water into a heavy sauce pan and bring it to boil. After that mix the barley in this water and allow it to simmer. Cover this heavy sauce pan and then reduce the heat as well. Boil it until all the water gets absorbed, this process will take roughly 40 to 50 minutes after which let the barley cool at room temperature.
Then grab a small skillet and pour oil into it after which put it over medium heat. Now add onion to this oil and cook it until they turn golden brown.
After that get a serving dish and combine onion with apricot, parsley, barley and almonds by tossing them together.
Subsequent to this mix honey, yogurt, cinnamon, lemon juice, salt, nutmeg, turmeric in a small bowl, then pour the barley mixture over these recently blended ingredients and toss well in order to combine all of them. When the tossing gets complete this salad is ready to be served at room temperature.
