Broccoli soups are easy-to-make and are extremely healthy for the body. The soup is popular amongst weight conscious people who have it at least two times a day. Cancer patients are also advised to increase the intake of Broccoli to prevent the disease from spreading. The Cream of Broccoli Soup will take only 35 minutes to make and uses minimal ingredients.
Ingredients
  • Chicken broth - 3 cups
  • Broccoli florets - 8 cups
  • Chopped stalk celery - 1
  • Chopped onion - 1
  • Milk - 2 cups
  • All-purpose flour - 3 tablespoons
  • Butter - 5 tablespoons
  • Black pepper - As per taste
Instructions
  1. Preheat the medium-sized stock pot and add two tablespoons of butter in it when it reaches the required temperature.
  2. Add the chopped onions and stalk celery to the pot and wait until the two reach the desired colour.
  3. When the two ingredients in the pot are ready, pour in the cups of broccoli and chicken broth to the pot and lightly stir the mixture before covering it.
  4. Leave the pot covered for at least 10 minutes
  5. Add the mixture from the pot to a blender slowly and equally distribute to all sides of the pitcher.
  6. Make sure that the pitcher is not more than halfway full as that would not give the desired results.
  7. Gently blend the ingredients with a few quick pulses so that the thick combination turns into a puree.
  8. Pour the puree in large bowl and set aside for use afterwards
  9. For the filling, add three tablespoons of butter in a saucepan on medium heat.
  10. Now add the all-purpose flour and milk to the butter and stir the mixture with a wooden spatula.
  11. Make sure to clean the sides of the saucepan to avoid any sticking.
  12. Remove the mixture from the oven when it reaches the desired thickness.
  13. Now add it to the puree in the large bowl and serve it immediately with pepper.
