How to Bake With Whole Grains

In addition to being delicious, whole grains, unlike processed foods (e.g. white flour), are extremely high in nutritional value (the bran and the germ). Not only  do they add healthy fibre to your diet, they also help protect you against many chronic diseases, such as cancer and cardiovascular disorders. Whole grains can be eaten in many forms and dishes, such as in a main course meal or in a salad; however, they are most commonly used in baked goods.

Healthy versions of baked goods like breads, cakes, cookies, and muffins, can all be made by using whole grains. Not only do these baked items taste good, they also add healthy nutrients to your diet. Ingredients:
Old-fashioned rolled oats: 3/4 cup
Whole-wheat flour: 3/4 cup
All-purpose flour: 3/4 cup
Baking powder: 2 teaspoons
Baking soda: 1 ½ teaspoons
Ground cinnamon: 1/2 teaspoon
Ground coriander: 1/2 teaspoon
Salt: 3/4 teaspoon
Honey: 1/2 cup(s) plus 2 tablespoons
Buttermilk: 1/2 cup
Canola oil: 1/2 cup
Eggs: 2 (large)

Instructions

    Preheat your oven to 375 degrees Fahrenheit. Then, prepare a 12-cup muffin tray by spraying it with some vegetable oil. If you do not have a cooking spray, you can also grease it with melted butter.

    Combine ¾ cup of old fashioned rolled oats with an equal amount of whole wheat flour in a large mixing bowl.

    Then, add in the all-purpose flour, baking soda, baking powder, ground coriander, ground cinnamon, and a pinch of salt. Proceed to mix all these ingredients together thoroughly.

    In another bowl, whisk together half a cup of honey and half a cup of butter milk for 30 seconds. Then, add in the canola oil, and two large eggs. Whisk well to form a smooth concoction.

    Pour the honey mixture into the bowl containing the dry ingredients, and mix thoroughly until everything is well combined, and you have a smooth batter.

    Pour this batter into the prepared muffin cups and slide the baking tray into the oven that was preheated at 375 degrees Fahrenheit. Let them bake for 15 to 18 minutes, or until they develop a nice golden brown colour on top.

    Once they are done, remove the muffins from the oven. Allow them to cool in the pan for about 5 to 7 minutes, before transferring them to a wire rack.

    Serve warm or at room temperature, with a drizzle of honey or a sprinkling of ground cinnamon.
