How to Make a Zucchini and Herb Frittata

This Zucchini and Herb Frittata recipe is very tasty. You will be surprised that people who don’t like zucchini may find themselves enjoying this Zucchini and Herb Frittata.

Serve it with some roasted potatoes and on a bed of green herbs or fresh vegetable slices.

Ingredients:

Zucchini (coarsely grated): 1 ¼ lbs
Salt and pepper: ½ teaspoon
Butter: 3 tablespoons
Large eggs: 6
Roasted garlic: 1 tablespoon
Basil (chopped): 2 tablespoons
Cheese (freshly grated): ¼ cup
Pine nuts: ¼ cup

    First you will want to wash your hands and also take some time to clean the work area that you will be using in the kitchen. Also, carefully wash the ingredients, utensils and other items that you will be using to prepare this recipe. Always keep your kitchen work area free from clutter so that you can grab what you need quickly. In a large colander, toss 1 ¼ lbs of coarsely grated zucchini with 1 tablespoon of salt and set aside for around 20 minutes.

    After 20 minutes, briefly rinse the zucchini slices with some cold water and squeeze dry with both hands.

    Set the zucchini aside and place 1 ½ tablespoons in a non-sticky skillet. Warm it over medium heat until it melts completely.

    Add in drained zucchini and stir cook it for 6 to 8 minutes or until dry and speckled with gold in some places.

    Remove the skillet from heat and transfer fried zucchini to a large bowl.

    Now preheat your boiler.

    Break six large eggs into a big mixing bowl and beat them until frothy, using a whisk or fork.

    Dust the foamy egg with a few pinches (about half teaspoon) of salt and ground black pepper.

    Drizzle it over the fried zucchini in the large bowl and top with 1 tablespoon of roasted garlic, 2 tablespoons of finely chopped basil and ¼ cup of freshly grated cheese.

    Place the remaining butter to a large skillet and place on your stove with medium-high heat range.

    When the butter melts, add in the egg mixture and lower the heat to medium range. Now cook it for 10 to 12 minutes or until almost dry.

    Shift this frittata in the preheat broiler and dust with ¼ cup pine nuts. Slightly broil until golden brown and remove the frittata broiler. Let it rest for few minutes until slightly warm.
