The first step in checking to tell whether your cheesecake is done is to go for the centre. It should be firm and a little wobbly but not in any way liquid in the centre, which could mean that it is not yet done. Grab a toothpick and stick it all the way to the centre and see if it comes out with any liquid on it.
Checking the temperature of a cheesecake is a good idea because if it has reached a temperature of 160 to 165 degrees F, it is ideal and most probably done. This can be done by sticking in an instant-read thermometer and reading the temperature. Anything lower than that or higher could signal trouble.
Use a knife if you feel that the toothpick is too small to test out whether your cheesecake is properly done and ready-to-eat. Slicing anywhere on the cheesecake is recommended because if it comes out clean without any liquid on it, it is highly likely that your cheesecake is ready. If the cheesecake is too hard to slice a sharp knife through it, it could mean that the cheesecake has been baked for too long and may not be good to eat.
Cooling Down the Cheesecake
After you have seen that the cheesecake is done and ready, it is now time to cool it down. This is done by cooling it for a few minutes at room temperature and then shifting it to the fridge. Cheesecake is always served cold and not hot, which is how most people like it. Always make sure that it is stored in a cool and dry place.
