Sunny Day Chicken Salad Recipe

Ingredients:

– 250g of roast chicken (preferably breast) – finely cubed
– 1 ripe avocado – nicely diced
– 1 large or 2 small ripe tomatoes – finely diced
– 30 to 50g of diced cucumber – skin on preferably
– 1 handful of chopped fresh coriander
– 1 tablespoon of extra virgin olive oil
– 1 tablespoon of capers
– Salt and ground pepper
