– 3 (340g) tins sweetcorn
– 2 large tomatoes, diced
– 1 large red onion, cut into thin strips
– 4 spring onions, chopped
– 1 bunch fresh coriander, minced
– 2 limes, juiced
– 5 tablespoons rice vinegar
– salt to taste

    Take a large bowl and combine 3 (340g) tins of sweetcorn, 2 diced large tomatoes, 1 large red onion cut into thin strips along with 1 minced bunch of fresh coriander.

    Then squeeze juice of 2 limes over this mixture of sweetcorn and stir it. After this, put in 5 tablespoons or to taste rice vinegar in this mixture. The amount of vinegar usually depends on the tartness of the limes juice and sugariness of the corn.
