Rice is a staple food in many parts of the world, especially in South East Asia. There are so many ways in which you can cook rice. You can simply boil rice or add an assortment of ingredients to it in order to create appetizing recipes, which vary from region to region.
Mexico is also a rice loving country and among the various rice related cuisines, the Mexican rice stands out. It can be prepared within one hour and there are so many ways in which you can experiment with flavours.

Ingredients:
- 1 tablespoon extra virgin olive oil or canola oil
- 1 cup white rice
- 2 garlic cloves, chopped
- 2 cups water or chicken broth
- 1/2 cup chopped white onion
- 1 Roma tomato, cut into four equal pieces
- 1/4 cup tomato sauce or tomato paste
- 1 teaspoon cumin
- 1 teaspoon powdered chicken bouillon
- 1 jalapeno pepper, or pepper of choice
- Lime slices – Salsa
Heat oil in a pan
Take a dry pan, the size of which should be according to the quantity of rice you plan to cook. Ideally, a medium sized pan will do the trick. Place it on a stove and heat it for a couple of minutes on medium flame. Now, add some oil to it and increase the heat under the pan.
Add rice
Add uncooked rice to the pan and stir it properly, so that every grain gets coated with oil. In order to get better results, always rest rice in cold water for at least half an hour before you start cooking.
Mix seasonings
Once the rice gets coated with oil, start adding seasonings to the pan and make sure that your continue stirring with one hand.
Add chopped onions and tomatoes
Use a sharp knife to chop onions and tomatoes. Now, add them to the pan and cook for some time.
Pour water
Finally, pour some cold water over rice and cook for 30 minutes. Make sure that the pan is covered properly so that the heat stays inside.
