Garden Pasta Salad Recipe

Garden Pasta Salad is an evenly dressed dish, getting plenty of zest from basil and fresh kalamata olives. It is very simple to make and is one among the favorite dishes of families. This luscious and zesty salad is a perfect mix up of shredded carrot, cubed bell pepper and sliced tomatoes. Garden Pasta Salad is a rich source of minerals, proteins, and vitamins. Ingredients:
-1 package uncooked spiral pasta
-1/3 cup reduced-fat mayonnaise
– 1/3 cup low-fat plain yogurt
– 2 tablespoons extra-virgin olive oil
– 1 tablespoon red-wine vinegar, or lemon juice
– 1 minced clove garlic
– 1/8 teaspoon salt
– Freshly ground pepper, to taste
– 1 cup halved cherries or grape tomatoes
– 1 cup diced yellow or red bell pepper
– 1 cup (about 2 to 4) grated carrots
– 1/2 cup (about 4) chopped scallions,
– 1/2 cup chopped pitted kalamata olives
– 1/3 cup slivered fresh basil

Instructions

    Fill a medium pot with water and add in salt according to your taste.

    Cover the pot, place it on stove over medium heat and bring it to boil. Add in one package of spiral pasta and cook it according to given instructions, stirring it constantly.

    Remove the pot from heat and drain the cooked paste with care. Now, refresh them for few seconds; put them under cold running water for 10 seconds and drain them again. Place the refreshed pasta in a large serving platter or bowl and set aside until you mix the dressing’s ingredients.

    Take a bowl and place the yogurt, mayonnaise, extra-virgin olive oil, garlic, salt and pepper in it. Whisk all these ingredients until the smooth and the salt dissolves. Add in the bell pepper, olives, basil, tomatoes, scallions and carrots. Mix the recently added ingredients into the mayonnaise mixture until incorporated well.

    Spoon this mixture over the cooked pasta on the serving platter or bowl and toss gently to coat well.
