Take a large sauce pan, pour water in it and then place rice in this pan. Sauté this mixture over high heat and bring it to boil. Then, reduce the heat by bringing it to low after which cover the pan and allow it to cook for about 45 to 60 minutes or until the rice absorb all the water.
In the meantime, grab a small bowl and whisk together oil along with orange juice, balsamic vinegar, orange zest, salt and honey. Then, pour this dressing over the hot cooked rice and mix all of them well. After that cover the pan and allow it to chill.
Do not forget to mix the spinach leaves together with onion and oranges in the rice mixture just before serving. The salad will then be ready to serve.
