Fiesta Salad Recipe

Fiesta Salad is very simple to prepare and is always lovingly remembered. It is a great addition to any kind of meal. Best of all, Fiesta Salad allows you to customize it according to your liking.  The buttermilk dressing further enhances the overall look and taste of the salad.

This simple Fiesta Salad Recipe serves four to six people, though you can easily increase the quantity of the ingredients in order to accommodate more people.

Utensils: Large Salad Bowl, Large Spoon, Medium Mixing Bowel

Ingredients:

– 2 romaine hearts – finely chopped
– 1 bunch green onions – sliced
– 1 can / 15-ounce black beans, drained and rinsed
– 1 pint cherry tomatoes – sliced
– 1 cup corn kernels – defrosted if frozen
– 4 red radishes – sliced
– 1 red bell pepper – seeded and chopped

Buttermilk Lime Dressing:

– 1 teaspoon apple cider vinegar
– 1 tablespoon honey
– 1 lime, juiced
– 1/3 cup well shaken buttermilk
– 2 tablespoons chopped cilantro leaves
– Salt and freshly ground black pepper
– 1 clove garlic, finely chopped

Instructions

    Take a large serving bowl or salad bowl and add in 2 finely chopped romaine hearts, 1 bunch of sliced green onions, and 15 ounces of drained and rinsed black beans.  Mix the ingredients.

    Add 1 pint of sliced cherry tomatoes, 1 cup of corn kernels, 4 sliced radishes, and 1 seeded and chopped red bell pepper into the serving bowl.

    Note: Do not forget to defrost the corn kernels if you are using frosted ones.

    Set the large bowel aside until you make Buttermilk Lime Dressing.

    Get a medium sized bowl and add 1 teaspoon apple cider vinegar, 1 tablespoon honey, 1 sliced lime, 1/3 cup well shaken buttermilk, 2 tablespoons chopped cilantro leaves, Salt and freshly ground black pepper to taste and 1 finely chopped clove garlic in it.

    Whisk all the ingredients with a large spoon until they are smooth and form a thick dressing.

    Drizzle the buttermilk-lime dressing into the salad in the large bowl and toss well to coat the ingredients.

    Dish up your Fiesta Salad with 4 to 6 medium serving bowls.
