Healthy Garden Salad Recipe

The Healthy Garden Salad is a wonderfully filling dish, which is low easy to make and low in calories. It will fill you up and bring your taste buds to life with a unique blend of corn, cherry tomatoes and black bean with a light lime vinaigrette dressing.

Salad’s Ingredients:

– 1 package (about1 pound) frozen green soybeans
– 3 cups frozen corn kernels
– 1 pint cherry tomatoes – quartered
– 4 green onions – thinly sliced
– 1 can (about 15 ounce) black beans – rinsed and drained

Lime vinaigrette dressing’s Ingredients:

– 5 tablespoons red wine vinegar
– 3 tablespoons grape seed oil
– 1/3 cup fresh cilantro – finely chopped
– 2 limes – juiced
– 1 teaspoon white sugar
– 3/4 teaspoon salt
– 2 cloves garlic – nicely minced

    In a mixing bowl,  mix up the red wine vinegar, finely chopped fresh cilantro, grapeseed oil, lime juice and the nicely minced garlic. Sprinkle the salt and white sugar all over the mixture. Now, whisk together the ingredients until the sugar and salt dissolves thoroughly. Set this dressing aside until you put together the remaining ingredients.

    Take a large pot and add in some water. Add some salt to it according to your taste. Now, bring this lightly salted water by placing it on the stove with medium heat.

    Once the water starts boiling, add in the frozen green soybeans and boil them for 2 to 3 minutes or lightly tender but crispy.

    Top the green soybeans with frozen corn kernels and boil for one more minutes.

    Now drain the bean-corn mixture with a medium sieve and place in the dressing’s bowl. Mix in the black beans, green onions and cherry tomatoes.

    Gently toss the ingredients in the bowl to coat them in the lime vinaigrette dressing.

    Now, cover the bowl of salad with a plastic wrapping sheet or by placing a flat plate at the top.

    Refrigerate your Healthy Garden Salad for at least 2 hours in order to chill it properly and to blend the flavors.

    Take out the salad from refrigerator at the end of two hours, unseal it, mix up the ingredients very gently and serve.
