Chicken mushroom risotto is one of the most delicious recipes. It is a perfect blend of mushrooms, chicken, rice, cheese and cream. It is not very difficult to make and can be prepared within an hour if you have the required ingredients. If you are looking forward to cook chicken mushroom risotto at your home, you can take help from the given steps.
Ingredients
  • Buttrer - 2 tablespoons
  • Fresh mushrooms, sliced - 2½ cups
  • Skinless chicken breast (cut into half-inch pieces) - 1 -2 piece
  • Chicken stock (heated) - 5½ cups
  • Arborio rice - 1½ cups
  • Garlic cloves, crushed - 4
  • Grated parmesan cheese" 1 cup
  • Cream (as per your taste) - ¼ cup
  • Dry white wine - ½ cup
  • Chopped onion - 1 large
  • Chopped fresh parsley - 2 tablespoons
  • Oil
  • Salt & pepper
Instructions
  1. Take a large pot, pour oil in it and heat it on medium heat flame on the stove.
  2. Then, add the mushrooms and chicken into it and cook until they become brown and fully cooked.
  3. Remove the mushrooms and chicken from the pot into a plate or dish.
  4. Now, add butter in the pot and place it on the stove. After that, add onions and garlic in the pot and pour the remaining oil.
  5. Then, add rice and keep stirring until they become opaque (you will have to cook for around 2 minutes).
  6. Add salt and pepper according to your taste and mix all the ingredients well.
  7. Then, add half a cup of heated chicken stock and mix well.
  8. You have to cook until the time when you see rice and broth start to bubble a little bit.
  9. Keep cooking for around half an hour until the rice become tender.
  10. Then, add the chicken and mushroom mixture into the pot again.
  11. Now, add half a cup of grated parmesan cheese, cream and parsley and mix all the ingredients well.
  12. When all the stocks are absorbed and the risotto becomes thick, remove the pot from the heat.
  13. You can add the remaining parmesan as topping before serving.
