How to Make a Soft Pretzel

Utensils: Bowl, stand mixer, dough hook, tablespoon, plastic wrap, parchment paper, oven, cup, saucepan


– 1 package active dry yeast
– 1 tablespoon sugar
– 10 cups water
– 1 1/2 cups warm water (heat it up at 110 degrees F)
– 2/3 cup baking soda
– 2 teaspoons kosher salt
– 22 ounces all-purpose flour, 4 1/2 cups
– 2 ounces unsalted butter, melted
– Pretzel salt
– Vegetable oil, for pan
– 1 large egg yolk beaten with 1 tablespoon water

    At first, mix up the sugar, water and kosher salt in a stand mixer bowl. Before mixing it up, spread the yeast. Now wait for almost 5 minutes to let it mix up until you see foam at the top of mixture.

    Now use dough hook attachment to add butter and flour into the mixture and mix it up on a slow speed. Then gradually increase the speed to medium point for almost 5 minutes.

    Then separate the dough from bowl and oil it with vegetable oil after cleaning the bowl.

    You need to put dough back to the bowl. Properly cover it with a plastic wrap and put in on a warm place for 55-60 minutes. Keep watching until the dough gets doubled in size.

    Now you need to preheat the oven to 450 degrees F and also use parchment paper to line 2 half-sheet pans. Give it a light brushing of vegetable oil.

    Not take water, 10 cups, and baking soda and put in an 8-quart saucepan for a rolling boil.
