Extra-virgin olive oil: 7 tablespoons
Sprigs fresh thyme: 3 large
Finely chopped thyme leaves: 2 teaspoons
Kosher salt and freshly ground black pepper
Clove garlic: 1 large
Spinach, stems removed, washed and dried: 20 ounces
Grated zest: 1 lemon
Large eggs, lightly beaten with a fork: 2
Pinch of cayenne pepper, or more to taste
Sourdough bread crumbs: 1 cup
Feta cheese, crumbled: 4 ounces
