How to Make Bearnaise Sauce

Utensils: Measuring cups and spoons, Medium saucepan, Small bowl, Large flat-bottom pan, Sharp knife, Cutting board, Wooden mixing spoon, Whisk, Egg separator, Mesh strainer, Stove

Large eggs: 2
Dry white wine: ½ cup
Medium shallots: 2
Cup sherry vinegar; ¼ cup
Bunch of fresh tarragon: 1 oz.
Cold water: 1 tbsp
Unsalted butter: 1-1/2 sticks
Fresh lemon juice: 1-1/2 tbsp
Dry tarragon leaves (crushed): 2 tbsp
Cayenne: 1 Dash
Salt: 1 Dash

    Wash and rinse one ounce of fresh tarragon. Chop the bunch finely and remove the stems. Next, chop two medium sized shallots and put them in another bowl. Cut the butter into small cubic pieces and keep them in a separate bowl.

    Let the sauce pan heat up on medium temperature on a stove. Add ingredients, including finely chopped tarragon and shallots, and wait for the mixture to come to boil. Continue to cook the mixture until the paste achieves a very thick texture or when there are only about 2 table spoons of sauce left in the pan. Remove as much liquid as possible from the mixture. Use a strainer and the back of a large wooden spoon to squeeze out the liquid.

    Now pour the mixture, egg yolks, some water and salt into the sauce pan. Mix the ingredients thoroughly on low heat. Add cubes of butter that you had prepared and continue to mix gently. Pour in cayenne, crushed tarragon leaves and lemons juice for enhance taste.

    The dish is ready.
