How to Make Butternut Squash and Mushroom Lasagna

Butternut squash and mushroom lasagna is one of the most delicious lasagna recipes and is widely cooked all over the world, especially in the European countries. It is a perfect blend of butter, squash, mushrooms and cheese.

Utensils: Cups, saucepan, spoons, frying pan, skillet and bowls.

Unsalted butter: 1/4 cup (1/2 stick)
Grated Parmesan cheese, divided: 2 cups
Chopped onions: 2 1/2 cups
Crimini (baby bella) mushrooms, sliced (about 3 cups): 1/2 pound
Eggs: 4 large
Olive oil
Butternut squash, peeled, seeded, cut into 1/4-inch-thick slices (about 5 1/2 cups): 2 pounds
Containers whole-milk ricotta cheese: 3 15-ounce
Grated mozzarella cheese, divided: 4 cups
Can vegetable broth: 1 14-ounce
Chopped fresh thyme, divided: 4 tablespoons
sliced fresh sage, divided: 4 tablespoons
No-boil lasagna noodles: 1 9-ounce package

    First of all, take a large skillet and keep it on a medium-high heat. Add onions into it and sauté them until they become soft (it will take around eight minutes).

    Then, increase the heat and add mushrooms into the skillet. Cook them for around three minutes. After that, you have to add salt and pepper according to your taste. Transfer the mixture in a bowl and keep it separately.

    Now, you have to add the squash, sage, thyme and broth in the same skillet. Cook the mixture for around six minutes on medium heat until the squash softens. Add salt and pepper as per your requirement.

    Take a large bowl and put mozzarella cheese, ricotta, parmesan cheese, thyme and sage in it. Mix all the ingredients well. Add salt and pepper and blend the mixture in eggs.

    Brush the ceramic baking dish with cooking oil and speak ricotta mixture in it. Now, place three noodles on the top and spread ricotta mixture on the top. Then, sprinkle squash, mushroom and mozzarella mixture on the top. After that, place some noodles on the mixture and keep making the layers until all the mixtures have been placed. Cover the dish with the help of oiled foil.

    You have to preheat the oven to 350 degrees Fahrenheit. Place the lasagna in the oven and bake it for around 35 minutes. Get it out and keep it for aside for 10 minutes to cool down before serving.
